Marius Bosmans chose the picturesque Chateau de Vignee on the banks of the Lesse River to convey his understanding of the Ardennes through the seasons. The young chef has had time to tend to his own garden and bond with nearby hunters while renovating a charming 18th-century mansion and farmhouse. Forage for vegetables and British wild birds. He wants his products to speak as naturally as possible, not too foreign to nature. Purity and simplicity blend together in the warm and cozy atmosphere of the restaurant lobby or in the vibrant colors painted in the large rooms, reflecting the natural beauty of the environment. The bedroom focuses on the essentials and condenses its function. It’s on either side of the yard of the farm. Ardennes’ ever-changing beauty is also an inspiration. It oscillates between vibrant and intense tones and a soothing atmosphere.
